  1. Dense or Heavy Cake
    What happens: Flat, brick-like texture instead of fluffy crumbs.
    Why: Overmixed batter develops tough gluten, or cold curd/oil lumps wet ingredients.
    Fix: Fold dry into wet with 10 spatula strokes max. Room-temp everything 30 mins before. Test: batter should ribbon off spoon.
  2. Sunk Center
